  • 2 cups butternut squash, cubed
  • 1 cup carrots, sliced
  • 1 cup peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 2 cups chicken broth
  • 1 pie crust
  • 1 tablespoon olive oil
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.
  3. Add diced chicken to the skillet, cooking until browned.
  4. Stir in squash, carrots, and peas; cook for about 5 minutes.
  5. Add chicken broth, thyme, rosemary, salt, and pepper. Let simmer for 10 minutes.
  6. Transfer mixture to a pie dish and cover with pie crust.
  7. Cut slits in the crust for venting.
  8. Bake for 25-30 minutes or until the crust is golden brown.
  9. Let cool before serving.
