  • 3 pounds pork shoulder
  • 1 cup apple cider
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the pork shoulder with salt and pepper and brown on all sides.
  3. Remove the pork from the pot and set aside. Add onions and garlic to the pot, sautéing until softened.
  4. Add apple cider, thyme, and red pepper flakes, stirring to combine.
  5. Return the pork shoulder to the pot, cover with a lid, and transfer to the oven.
  6. Braise for about 3-4 hours until the pork is fork-tender.
  7. Remove from the oven and let rest for 10 minutes before slicing or shredding.

Notes

  • For added flavor, marinate the pork in apple cider overnight before cooking.
  • Serve with mashed potatoes or roasted vegetables.
