  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs
  • 1 cup apple cider
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth, then add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing after each addition.
  5. Stir in apple cider, cinnamon, nutmeg, and salt until smooth.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 60-70 minutes, until the center is set. Let it cool before serving.
  8. Top with sour cream and let it chill in the refrigerator for at least 4 hours before serving.
