  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon

  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a saucepan, bring the apple cider to a boil and then reduce to a simmer until it reduces to about 1/2 cup.
  3. In a large bowl, whisk together the dry ingredients: flour, brown sugar, granulated sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, mix the wet ingredients: reduced apple cider, vegetable oil, egg, and vanilla extract.
  5. Combine the wet and dry mixtures until just combined and fill the muffin tins.
  6. Bake for around 12-15 minutes or until a toothpick inserted comes out clean.
  7. Let cool slightly before transferring to a wire rack.
