  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and let it simmer until reduced to about ¾ cup, approximately 15 minutes.
  3. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another large bowl, mix together the vegetable oil, sugar, eggs, and vanilla extract until well combined.
  5. Stir in the reduced apple cider and melted butter into the wet ingredients.
  6. Gradually fold in the dry ingredient mixture until just combined.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
