Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the apple cider and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, ground cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the granulated sugar and ground cinnamon for rolling.
  7. Shape the dough into balls and roll them in the cinnamon-sugar mixture.
  8. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
