2 large flour tortillas
1 medium apple, peeled and diced
1 tablespoon cinnamon
2 tablespoons brown sugar
1/2 cup shredded cheese (cheddar or mozzarella)
1 tablespoon butter
Instructions
In a bowl, mix diced apples, cinnamon, and brown sugar.
Heat a skillet over medium heat and melt butter.
Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
Add the apple mixture on top of the cheese, then sprinkle the remaining cheese over the apples.
Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
Remove from skillet, let cool slightly, and cut into wedges.
Notes
For an extra crunch, add walnuts or pecans to the apple mixture.
Serve with a drizzle of maple syrup for added sweetness.
