- 2 cups chopped rhubarb
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C). Grease a muffin tin.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, vegetable oil, and vanilla extract. Add the chopped rhubarb.
- Combine the wet ingredients with the dry ingredients and stir until just blended.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before transferring to a wire rack.
Notes
- For a sweeter muffin, you can add an additional 1/2 cup of sugar.
- Make sure to use fresh rhubarb for the best flavor.
