Aunt Norma's Rhubarb Muffins

Aunt Norma’s Rhubarb Muffins are the perfect blend of sweet and tart, making them an irresistible treat for any time of day.

  • 2 cups chopped rhubarb
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, and vanilla extract. Add the chopped rhubarb.
  4. Combine the wet ingredients with the dry ingredients and stir until just blended.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before transferring to a wire rack.

Notes

  • For a sweeter muffin, you can add an additional 1/2 cup of sugar.
  • Make sure to use fresh rhubarb for the best flavor.
