Autumn Pumpkin Honey Bun Cake

  • 1 1/2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, sugar, and vegetable oil until well blended.
  4. Add eggs and stir until combined.
  5. Gradually mix in the dry ingredients.
  6. Pour half of the batter into a greased baking pan.
  7. Sprinkle with half of the brown sugar and nuts.
  8. Add the remaining batter and top with the remaining brown sugar and nuts.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let it cool before serving.

Notes

  • This cake tastes even better the next day as the flavors meld together.
