Baked Pumpkin Donuts with Maple Glaze

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, mix the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Transfer the batter to a piping bag and fill each donut cavity about halfway.
  6. Bake for 12-15 minutes, or until a toothpick comes out clean.
  7. Once cooled, prepare the maple glaze by whisking together powdered sugar and maple syrup until smooth. Dip the tops of the donuts in the glaze.
