Bakery Style Mixed Berry Muffins

Delightful muffins bursting with fresh mixed berries, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the mixed berries.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra crunch, sprinkle some sugar on top of the muffins before baking.
  • These muffins can be made with any combination of berries you like!
