  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup honey
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, honey, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.
  5. Fill each muffin liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let them cool slightly before serving. Drizzle with extra honey if desired.
