Banana Pudding Crunch Cheesecake

A rich and indulgent dessert that combines the flavors of banana pudding and cheesecake with a crunchy topping.

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups heavy cream
  • 1 cup ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1 box instant banana pudding mix
  • 2 cups milk
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine crushed graham crackers and melted butter, then press the mixture into the bottom of a springform pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a large mixing bowl, beat the cream cheese and powdered sugar until smooth.
  5. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  6. Add the mashed bananas and vanilla extract to the mixture, blend well.
  7. In a separate bowl, whisk together the instant pudding mix and milk until thickened, then fold into the banana mixture.
  8. Pour the filling over the cooled crust and spread it evenly.
  9. Top with mini marshmallows and refrigerate for at least 4 hours or until set.
  10. Serve chilled and enjoy!

Notes

  • For added crunch, sprinkle some chopped nuts on top before serving.
  • Feel free to use vanilla pudding instead of banana pudding for a different flavor.
