Banana Zucchini Muffins

Delicious and moist banana zucchini muffins that are easy to make and perfect for the whole family.

  • 2 ripe bananas
  • 1 cup grated zucchini
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash the bananas and then mix in the grated zucchini.
  3. Add the sugars, oil, egg, and vanilla extract. Stir until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  5. Combine the dry ingredients with the wet ingredients until just mixed.
  6. Fill the muffin cups about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

  • Store in an airtight container for up to a week.
  • These muffins freeze well; simply thaw before serving.
