  • 1 cup granulated sugar
  • 1 tablespoon baking powder

  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter among the muffin cups, filling them about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack.
