Blueberry Breakfast Quesadilla

A delicious and easy recipe for a blueberry breakfast quesadilla that will kickstart your day.

Ingredients

  • 1 cup fresh blueberries
  • 2 flour tortillas
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • Butter for cooking

Instructions

  1. Heat a skillet over medium heat and add a little butter.
  2. Place one tortilla in the skillet and sprinkle half of the cheese over it.
  3. Add the blueberries and drizzle with honey, then sprinkle cinnamon.
  4. Top with the remaining cheese and cover with the second tortilla.
  5. Cook until the bottom is golden, then carefully flip and cook the other side until golden and the cheese is melted.
  6. Remove from skillet, slice into wedges, and serve warm.
