Blueberry Chocolate Lavender Dream Cake

  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon dried lavender buds
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the flour, sugar, cocoa powder, lavender, baking powder, baking soda, and salt.
  3. Add the butter and mix until crumbly.
  4. In another bowl, whisk together the eggs, vanilla, and buttermilk.
  5. Combine the wet and dry ingredients and mix until smooth.
  6. Fold in the blueberries gently.
  7. Divide the batter between the prepared pans and smooth the tops.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let the cakes cool for 10 minutes before removing from pans.
  10. Frost with lavender-infused chocolate ganache if desired.

Notes

  • For a more intense lavender flavor, increase the amount of dried lavender.
  • To make it gluten-free, substitute with a gluten-free flour blend.
