  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat together the cream cheese, milk, melted butter, and egg until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold to combine. Be careful not to overmix.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra flavor, add a teaspoon of vanilla extract to the wet ingredients.
  • You can substitute frozen blueberries if fresh ones are not available.
