  • 1 cup sugar

  • 3 large eggs

  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust.
  6. In a separate bowl, mix blueberries, cornstarch, and lemon juice, then spoon over the cheesecake.
  7. Sprinkle brown sugar on top.
  8. Bake for 50-60 minutes or until set. Let cool before serving.
