Blueberry–Lemon Curd Tart

A delightful tart made with fresh blueberries and smooth lemon curd.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1 cup lemon curd

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the flour, butter, sugar, and salt to form a dough.
  3. Press the dough into a tart pan and bake for 15 minutes.
  4. Remove from the oven and let it cool.
  5. Spread the lemon curd over the cooled crust.
  6. Top with fresh blueberries and bake for an additional 10 minutes.
  7. Let cool and slice before serving.

Notes

  • For a sweeter tart, increase the sugar in the crust.
  • Serve with whipped cream for added flavor.
