Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine rolled oats, Greek yogurt, honey, almond milk, and vanilla extract.
  3. In another bowl, whisk together baking powder, baking soda, and salt.
  4. Combine the wet and dry ingredients until just mixed, then gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
