Blueberry Oatmeal Muffins

  • 1 cup milk
  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the oats and milk. Let it sit for about 10 minutes.
  3. Add honey, oil, eggs, and vanilla extract to the oat mixture and mix well.
  4. In another bowl, combine whole wheat flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients. Mix just until combined.
  6. Fold in the blueberries gently.
  7. Divide the batter evenly into a lined muffin tin.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let muffins cool for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, add a sprinkle of cinnamon to the batter.
  • Feel free to substitute almond milk or any other milk alternative.
