  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 package refrigerated pie crusts
  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix blueberries, sugar, lemon juice, and cornstarch.
  3. Roll out the pie crust and cut into squares.
  4. Place a spoonful of the blueberry mixture in the center of each square.
  5. Fold the crust over and seal the edges.
  6. Brush with egg wash and place on a baking sheet.
