Broccoli, Cauliflower and Cheese Soup

A creamy and indulgent soup that combines the flavors of broccoli, cauliflower, and cheese to warm your soul.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the broccoli and cauliflower, stirring for a few minutes.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  4. Blend the soup using an immersion blender until smooth.
  5. Stir in the milk and cheddar cheese, cooking until the cheese is melted.
  6. Season with salt and pepper to taste before serving.
