Broccoli Feta Soup

A warm bowl of broccoli feta soup perfect for chilly nights.

Ingredients

  • 4 cups broccoli florets
  • 1 cup feta cheese, crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 medium potato, peeled and diced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add broccoli, potato, and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes or until vegetables are tender.
  4. Remove from heat and blend the soup until smooth.
  5. Stir in feta cheese and return to low heat until warmed through.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

  • For added creaminess, blend in a cup of cream.
  • Top with extra feta for serving.
