Buttermilk Pancakes with Vanilla and Cinnamon

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the buttermilk, egg, melted butter, vanilla extract, and ground cinnamon.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  4. Heat a non-stick skillet over medium heat and add a little butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface.
  6. Flip the pancakes and cook until golden brown on the other side.
  7. Meanwhile, cook turkey bacon in another skillet until crispy.
  8. Serve the pancakes warm with turkey bacon on the side.

Notes

  • For extra flavor, add chocolate chips or blueberries to the batter.
  • These pancakes freeze well, so you can make a batch ahead of time.
