  • 4 cups fresh spinach
  • 1/2 cup pecans, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the diced butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast the squash for 25-30 minutes or until tender.
  4. In a large bowl, combine the roasted butternut squash, fresh spinach, chopped pecans, and crumbled turkey bacon.
