Caribbean Chicken and Rice

A delicious and easy-to-make Caribbean Chicken and Rice dish that your whole family will love.

Ingredients

  • 2 cups long-grain rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add chicken thighs to the pot and brown on all sides.
  3. Stir in rice, coconut milk, chicken broth, bell pepper, curry powder, thyme, paprika, and salt.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes until rice is cooked.
  5. Remove from heat and let stand for 5 minutes. Fluff with a fork and garnish with fresh cilantro before serving.

Notes

  • For a spicier kick, add diced jalapeños to the mix.
  • Serve with additional lime wedges for flavor.
