Cheddar Jalapeño Cornbread Waffles

A delicious twist on traditional cornbread, these Cheddar Jalapeño Cornbread Waffles paired with turkey bacon are a perfect blend of flavors.

  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped jalapeños
  • 2 large eggs
  • 2 cups buttermilk
  • 1/4 cup melted butter
  • 8 slices turkey bacon

Instructions

  1. Preheat waffle maker according to manufacturer’s instructions.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and pepper.
  3. Stir in shredded cheddar cheese and jalapeños.
  4. In another bowl, beat together eggs, buttermilk, and melted butter.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Pour batter into the preheated waffle maker and cook until golden brown.
  7. While waffles are cooking, cook turkey bacon in a skillet until crispy.
  8. Serve waffles topped with turkey bacon and additional jalapeños if desired.
