Chicken and Corn Chowder

  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 2 cups corn, canned or frozen
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 medium potatoes, diced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, add the diced chicken and cook until no longer pink.
  3. Add the onion and garlic to the pot, sauté until fragrant.
  4. Stir in the potatoes, corn, chicken broth, and thyme; bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Top with crispy turkey bacon before serving.
