- 2 cups cooked chicken, shredded
- 1 cup corn kernels, fresh or frozen
- 4 slices turkey bacon, diced
- 1 cup diced potatoes
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon thyme
- salt and pepper to taste
- In a large pot, cook the diced turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté the onion and garlic until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
- Stir in the shredded chicken, corn, and thyme. Cook for another 5 minutes.
- Pour in the heavy cream and mix well. Season with salt and pepper.
- Garnish with crispy turkey bacon and serve warm.
Notes
- This chowder can be made ahead of time and reheated.
- For a thicker soup, blend a portion of the chowder and mix it back in.
