Chicken and Corn Chowder: Easy Comfort with Turkey Bacon Delight

Chicken and Corn Chowder

A creamy and hearty chowder featuring chicken, sweet corn, and the delicious addition of turkey bacon.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels, fresh or frozen
  • 4 slices turkey bacon, diced
  • 1 cup diced potatoes
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon thyme
  • salt and pepper to taste

Instructions

  1. In a large pot, cook the diced turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
  4. Stir in the shredded chicken, corn, and thyme. Cook for another 5 minutes.
  5. Pour in the heavy cream and mix well. Season with salt and pepper.
  6. Garnish with crispy turkey bacon and serve warm.

Notes

  • This chowder can be made ahead of time and reheated.
  • For a thicker soup, blend a portion of the chowder and mix it back in.
