  • 2 pounds baby potatoes
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine potatoes and season with salt, pepper, and olive oil.
  3. In a bowl, mix heavy cream, Dijon mustard, minced garlic, thyme, salt, and pepper.
  4. Place chicken thighs on top of the potatoes and pour the cream mixture over them.
  5. Bake for 40-45 minutes until chicken is cooked through and potatoes are tender.
