Chicken Avocado Melt Sandwich

A delicious and satisfying sandwich combining the creamy texture of avocado with juicy chicken, melted cheese, and fresh vegetables.

  • 2 chicken breasts
  • 1 ripe avocado
  • 4 slices cheddar cheese
  • 4 slices whole grain bread
  • 1 tablespoon mayonnaise
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup lettuce
  • 1 tomato, sliced

Instructions

  1. Preheat a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then cook in the skillet until golden brown and cooked through.
  3. Remove the chicken and let it rest before slicing.
  4. In a bowl, mash the avocado and mix in the mayonnaise.
  5. Spread the avocado mixture on one side of each slice of bread.
  6. Layer the sliced chicken, cheese, tomato, and lettuce on top of the avocado spread.
  7. Top with another slice of bread, avocado side down.
  8. Brush the outside of the sandwich with olive oil, then grill on the skillet until golden and the cheese is melted.
  9. Slice in half and serve warm.

Notes
