Chicken Enchiladas with Sour Cream White Sauce

A delicious and easy recipe for Chicken Enchiladas with a creamy sour cream white sauce that is perfect for a comforting meal.

  • 2 cups shredded cooked chicken
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chicken, 1/2 cup of sour cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
  3. Place a generous amount of the chicken mixture in the center of each tortilla, roll them up tightly, and place them seam side down in a baking dish.
  4. Spread the remaining sour cream over the top of the rolled tortillas and sprinkle with cheese.
  5. Bake for 25-30 minutes until heated through and cheese is bubbly.
  6. Garnish with chopped green onions before serving.

Notes

  • For extra flavor, add diced green chilies to the chicken mixture.
