Chocolate Raspberry Layer Cake

A deliciously rich chocolate raspberry layer cake perfect for any celebration or indulgence.

Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh raspberries
  • 1 1/2 cups heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until smooth.
  5. Stir in boiling water until well combined.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Once cooled, layer the cakes with whipped cream and fresh raspberries in between.
  9. Frost the top and sides with remaining whipped cream and decorate with more raspberries.

Notes

  • For a richer chocolate flavor, use dark cocoa powder.
  • Let the cake cool completely before frosting.
