Christmas Pinwheel Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup red food coloring
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla, mixing well.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Divide the dough in half. Mix cocoa powder into one half and red food coloring into the other half.
  6. Roll each half between sheets of parchment paper into a rectangle.
  7. Layer the two rectangles together and roll them into a log.
  8. Chill the log in the refrigerator for at least 1 hour.
  9. Slice the log into 1/4 inch thick cookies and place them on a baking sheet.
  10. Bake for 10-12 minutes or until the edges are lightly browned.
  11. Cool on a wire rack before serving.

Notes

  • For a festive touch, sprinkle colored sugar on top before baking.
