  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 teaspoon ground cinnamon (for buttercream)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, and oil until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in buttermilk and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the buttercream, beat the butter until creamy, then gradually add powdered sugar and eggnog, mixing until smooth.
  10. Spread the eggnog buttercream between the cooled cakes and on top.
