2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
2 cups peeled, chopped apples
1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, combine flour, sugar, baking soda, salt, and cinnamon.
Add softened butter, eggs, and vanilla extract, mixing until just combined.
Fold in chopped apples and walnuts if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool before slicing.
Notes
For a sweeter bread, add an extra 1/2 cup of sugar.
