  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add in the softened butter and mix until well combined.
  4. Stir in the sugar, eggs, and vanilla extract.
  5. Mix the baking soda and salt into the flour, then gradually combine into the banana mixture.
  6. In a separate bowl, combine brown sugar and ground cinnamon.
  7. Layer half of the banana batter in the loaf pan, sprinkle half of the cinnamon sugar mixture, then top with the remaining batter and more cinnamon sugar.
  8. Bake for 60-70 minutes, or until a toothpick comes out clean.
