  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup coconut milk

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the coconut milk, then mix in the flour, baking powder, baking soda, and salt until just combined.
  5. Fold in the shredded coconut.
  6. Divide the batter into cupcake liners and bake for 18-20 minutes.
  7. Let cool before frosting.
  8. For the lime buttercream, beat together butter, powdered sugar, lime juice, and lime zest until fluffy.
  9. Frost the cooled cupcakes with the lime buttercream.
