Comforting French Onion Chicken Rice Bake

A delightful and comforting dish combining the flavors of French onion soup with chicken and turkey bacon, all baked together with rice.

Ingredients

  • 1 pound chicken breast, diced
  • 6 slices turkey bacon, chopped
  • 2 cups cooked rice
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup shredded cheese (gruyère or swiss)
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same skillet, sauté the onions until caramelized.
  4. In a large bowl, combine the chicken, cooked rice, onions, beef broth, thyme, salt, pepper, and half of the cheese.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheese and crispy bacon.
  6. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • This recipe can be made with leftover chicken or turkey.
  • For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
