- 1 cup canned pumpkin puree
- ¾ cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp pumpkin pie spice
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ¾ cup crumb topping (store-bought or homemade)
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
- In another bowl, whisk the eggs, then add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and vanilla extract. Mix until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fill each muffin liner about ¾ full and sprinkle the crumb topping on each muffin.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
