  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp pumpkin pie spice
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • ¾ cup crumb topping (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. In another bowl, whisk the eggs, then add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and vanilla extract. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fill each muffin liner about ¾ full and sprinkle the crumb topping on each muffin.
  6. Bake for 18-22 minutes, or until a toothpick comes out clean.
  7. Allow to cool before serving.
