  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion sliced
  • 4 cloves garlic
  • 2 cups beef broth

  • 8 hoagie rolls
  • 8 slices provolone cheese

Instructions

  1. Heat the olive oil in a skillet over medium-high heat and sear the beef roast on all sides.
  2. Place the sliced onion and garlic at the bottom of the crockpot.
  3. Add the seared beef roast on top of the onions and garlic.
  4. Pour the beef broth and Worcestershire sauce over the roast.
  5. Sprinkle thyme over everything.
  6. Cover and cook on low for 8-10 hours or until the meat is tender.
  7. Once finished, shred the beef using two forks.
  8. Serve on hoagie rolls topped with provolone cheese.
