Ingredients

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 apple, diced
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1/4 cup orange juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake sweet potatoes for 45-60 minutes until tender.
  3. Let cool, then slice in half and scoop out the insides.
  4. In a bowl, mix sweet potato flesh, cranberries, apple, brown sugar, butter, orange juice, cinnamon, and nutmeg.
  5. Stuff the mixture back into the potato skins and sprinkle with walnuts.
  6. Bake again for 20 minutes until heated through.

Notes

  • For a sweeter taste, adjust the amount of brown sugar to your preference.
  • Can substitute pecans for walnuts.
