  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup orange juice
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, orange juice, eggs, vanilla extract, and orange zest.
  4. Combine the wet and dry ingredients, stirring until just blended.
  5. Gently fold in the cranberries until evenly distributed.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

  • These muffins are best enjoyed fresh but can be stored in an airtight container.
  • Feel free to substitute dried cranberries if fresh ones are not available.
