  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 2 tablespoons olive oil

Instructions

  1. Start by slicing the turkey bacon and frying it in a pot until crispy.
  2. Remove the bacon and in the same pot, add olive oil, onions, and garlic, cooking until soft.
  3. Add the peeled and diced butternut squash, chicken broth, salt, pepper, and nutmeg. Bring to a boil.
  4. Reduce heat and let simmer for 20-25 minutes until the squash is tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream and adjust seasoning as needed.
  7. Serve hot, topped with crispy turkey bacon.

Notes

  • For a spicier kick, add cayenne pepper.
