- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 (28-ounce) can crushed tomatoes
- 4 cups chicken broth
- 12 ounces lasagna noodles, broken
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
- Add ground beef to the pot and cook until browned. Drain excess grease.
- Stir in crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 20 minutes, or until noodles are tender.
- Stir in ricotta, mozzarella, and Parmesan cheese. Cook until cheese is melted and soup is creamy.
