Creamy Lasagna Soup

A delicious and comforting creamy lasagna soup that combines all the classic flavors of traditional lasagna into a warm and cozy bowl.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 12 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
  2. Add ground beef to the pot and cook until browned. Drain excess grease.
  3. Stir in crushed tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 20 minutes, or until noodles are tender.
  5. Stir in ricotta, mozzarella, and Parmesan cheese. Cook until cheese is melted and soup is creamy.
  6. Remove from heat and stir in fresh basil before serving.

Notes

  • For a vegetarian option, replace ground beef with mushrooms and add extra vegetables like zucchini and bell peppers.
  • This soup can be frozen for up to 3 months. Just thaw and reheat when ready to enjoy.
