Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add mushrooms and cook until softened.
  3. Stir in wild rice and toast for a couple of minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer until rice is tender.
  5. Stir in the cooked chicken, heavy cream, and thyme. Season with salt and pepper.
  6. Simmer for an additional 5 minutes, then serve warm.
