Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until soft.
  3. Add carrots, celery, and potatoes; stir for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
