  • 2 medium carrots, diced
  • 1 bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 avocado, diced

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic, carrots, and bell pepper, cooking for about 5 minutes.
  3. Stir in the black beans, corn, diced tomatoes, and vegetable broth.
  4. Season with cumin, chili powder, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Stir in the cream or coconut milk, cooking for an additional 5 minutes.
  6. Serve the soup topped with tortilla strips and diced avocado.
